Summertime and the Grilling is Easy!

With Hawaii Island’s ideal year-round climate, outdoor cooking and dining are enjoyed every season. There’s just something about summer, however, that seems to bring out the grill master in all of us!

Currently trending among luxury homes up and down the Kona/Kohala Coast are completely outfitted, professional outdoor kitchens that include, among other tricked out appliances and accessories, wood-burning pizza ovens and Evo grills and griddles. The latter is lauded for being one of the most versatile, large scale cooking surfaces – allowing grilling and sauteing, as well as steaming, searing and frying  techniques among others.

Below, I share one of my favorite summer recipes – enjoy!                                                                                                                              

Lemongrass Chicken

Serves 4 to 6

Serve with stir-fried vegetables and basmati rice.

Ingredients

  • 6 6-8oz. chicken breasts, boneless
  • 1/4 cup lemongrass, chopped
  • 2 cloves garlic, minced
  • 2 shallots, minced
  • 2 Serrano peppers, deseeded, chopped
  • 3 tbsp. fish sauce
  • 1 lime, juiced
  • salt & pepper

Method

  1. Combine marinade ingredients in a food processor and puree. Marinate chicken breasts for at least three hours.
  2. Light Evo and set burners on medium.
  3. Season the chicken with salt and pepper. Grill on the lightly oiled Evo surface.
